Carrot Salad-Indian Style...

Mom used to prepare this salad often when I was in school .This salad was one of the very few dishes that would not require mom's coaxing to get it in!In spite of being a veggie hater during those days ,this one never failed to tempt me -both the taste and the simplicity .

This can be whipped up in a moment and tastes best with Chapathi. This simple salad goes to Sudeshna's Carnival of Salads and to Divya's Show me your salad event

I used:

Carrot -1 ,grated
Lemon juice - to taste
Salt to taste

Seasoning:

Oil- 1 teaspoon
Mustard-1/2 a teaspoon
Jeera/Cumin seeds -1/2 a teaspoon
Urad dhal-1/2 a teaspoon
Red chillies -2
Curry leaves- a few

Coriander leaves to garnish
  1. Place the grated carrot in a bowl and add lemon juice, salt.Mix well.
  2. Heat oil in a small pan and put in all the ingredients under 'seasonings'.
  3. When the mustard splutters and dhal turns brown, pour over the salad.
  4. Mix well and serve garnished with coriander leaves.

Some other salads that come to you from across the globe...

Cold cucumber salad - China
Kiwi salsa - Mexico
Pico de gallo - Mexico
Daikon carrot salad - Japan
Oh ee mu chim - Korea
Carrot salad - France
Black bean salad

Healthy eating!!
