I made this long back from Priya's Easy N Tasty Recipes and got the chance to post it now for Tried and tasted hosted here,eveny by Zlamushka, now carried on by Lakshmi.
I used :
Toor dhal -1 cup
Chopped carrot -1/2 a cup
Chopped bokchoy - 1/2 a cup
Onion- 1 chopped
Tomato -1 chopped
Mustard- 1 teaspoon
Cumin seeds- 1/2 a teaspoon
Urad dhal -1/2 a teaspoon
Red chillies - 4
Asafoetida- a pinch
Curry leaves - a few
Salt to taste
Oil-2 teaspoons
Grind to a smooth paste using a little water
Grated coconut -1/4 cup
Cumin seeds- 1/2 a teaspoon
Green chillies - 3
- Pressure cook toor dhal and carrot with enough water and keep aside.
- Heat oil in a pan and put in mustard,cumin seeds, urad dhal, red chillies, curry leaves and when it splutters add the onion and saute till translucent.
- Put in tomato and cook till soft.
- Add the ground paste,bokchoy and cook for a couple of minutes.
- Add the cooked toor dhal-carrot, salt and mix well.
- Adjust the consistency by adding a little water.
- Simmer for 5 minutes and remove from heat.
Serve with rice / roti.
