Any preparation with Rice sevai is my favorite and last weekend I prepared this nutritious vegetable and lentil rice sevai to go with our evening coffee.It may sound weird but it is a light snack kind of snack that can double as a breakfast dish as well.
Alter the ingredients to suit yout taste.Increase or decrease the lentils and vegetables based on how your family likes them.
Boiled vegetables-I used carrots,beans,peas
Boiled lentils-Black channa/chickpea and horsegram/kollu
Oil -1 teaspoon
Salt to taste
Heat oil in a pan and put in the seasonings and when it splutters add the boiled veggies,boiled lentils,rice sevai and salt.Mix well and simmer for a couple of minutes.Remove from heat and garnish with coriander leaves.Serve as a snack / breakfast dish.
