Russian Salad Sandwich

We are in Russia today as a part of the Culinary journey across the globe.When I wanted to make a Russian Salad, I saw a paper clipping that I had preserved from long back. The recipe was easy. Though potatoes are not the main ingredient here, it does have a little bit of potato in the filling, so I still stand on my grounds that I made a salad with potato as that is the theme I am following from for this Marathon!

I used:

Bread slices

Mayonnaise-1/2 cup
Mixed boiled vegetable - Potato, baby corn,beans -1/4 cup
Grated carrot- 2 tablespoons
Finely chopped capsicum-1 tablespoon
Salt and pepper to taste
Cream - 2 teaspoons

In a bowl, take mayo and cream and mix well. Add all the other ingredients and mix.Check for taste and adjust seasonings. Spread on the bread slices and serve immediately.

After spreading the filling, I toasted the bread. It tasted great...

This recipe is from a paper clipping from The Hindu.I usually stick the clippings on to some old / unused diary so that I need not look for them and also the clippings won't get crumpled.
