I have joined two new Reading Challenges for the year 2014.I have even opened a blog to document these reading challenges and I have named the new baby - Me and My Bookshelf!So I am gathering my book and preparing myself for this wonderful journey.
And the books that you see on the background in the pic below[not good props, I know!] are all a part of the reading challenge.I have a few more cardboard boxes full of books that I haven't even touched till now waiting to be opened.
Midst all the novels and classics that I had purchased and forgotten all about,I found a copy of Cooking with kids by Tarla Dalal.I set aside all the other books and started going through the cookery book.While browsing through the recipes section, I found this filling and healthy soup that became my lunch yesterday.
Wheat noodles- 1/2 pack[taken from a regular sized pack]
Mixed vegetables[of your choice], thinly slices- as much as you like.I used carrots, cabbage, baby corn,capsicum.
Kaala channa , cooked- a handful
Ginger and garlic -grated- 1 teaspoon
Corn flour- 1 tablespoon
Seasoning cube- 1
Salt to taste
Coriander leaves- to garnish
1. Heat oil in a pan and add the the ginger garlic, onions, vegetables and cook for a few minutes. Then add the tomato and kaala channa[brown chick peas].Cook for another 2 minutes. Add 3 cups of water and bring to boil.
2. Meanwhile dissolve cornflour and seasoning cube in 1/4 cup of water and keep aside. Once the water in the pan starts to boil, add the noodles and mix. Put in the corn flour mix and stir to mix. Cook till the noodles are soft.
Remove from pan and serve hot garnished with coriander leaves....
- Use any vegetable that you have at hand
- You can use vegetable stock instead of seasoning cubes.
- Using Kaala Channa is optional. I had some left over so used it up in this recipe.
- You can use any type of noodles.
- The quantity of water/ stock used will vary depending on the type of noodles.If the dish is dry, add more water/ stock to get the soupy consistency.
