For this week's Cooking with Cookbook Challenge, I have chosen a simple rice dish. I used to buy this magazine called Women's Era mainly for the recipes. Not having enough space to store all the book, I tore out the recipe pages and got it bound to a book form.
I have made a couple of changes to the original recipe .The dish is very easy to prepare and has a good flavor too...
Baby corn-10 numbers
Capsicum- 1 small
Basmathi rice-1/2 cup
Onion- 1 large
Ginger- 1" piece
Garam masala- 1 teaspoon
Turmeric powder- a large pinch
Cinnamon stick- a small piece, broken
Saunf / Aniseed- 1 teaspoon
Salt to taste
Oil- 1 teaspoon
1. Chop the vegetable and cook the basmati rice ensure that the grains are separate. Spread on a plate and keep aside.
2. Heat oil in a pan and put in the aniseed and the cardamom and the cinnamon bits.After a couple of seconds, add the onion, garlic and ginger and saute for a minute.Put in the capsicum and baby corn and saute for a couple of minutes.
3. Once the onion turns brown , add the garam masala and a little water and mix well.Add salt.Cover and cook for a few minutes. I like the vegetables to be a little crunchy but you can cook them till soft.Sprinkle a little water and mix once in a while if the mixture turns dry.Cook on medium heat.
4. Add the cooked rice and turmeric powder and mix well.
Serve garnished with coriander leaves...
I served this with a curry leaves raita and some fried crispies....
