Chinese Style Potato Vegetable

When I was browsing through Tarla Dalal’s website for a Chinese recipe, I saw a potato curry that looked similar to the Manchurian recipe. I prepared it for breakfast and saved a portion for hubby. It was awesome and in the evening when hubby tasted it, he wanted me to prepare the same for his lunch box the next day! So all I can say is that it is delicious way to cook the ever favorite potato.

This dish can be served as a snack or as an accompaniment to the main meal. We had this with Vegetable noodles. It takes just a few minutes to prepare. While the potato is getting cooked the other ingredients can be assembled. It is also perfect for a party menu.

The original recipe is here. I tweaked it just a little.



I used:

Potato – 1 large, cut in wedges / fingers
Spring onion whites, thinly sliced- ¼ cup
Ginger, minced- 1 teaspoon
Garlic, minced – 1 teaspoon
Red chilli powder- 1 teaspoon
Tomato sauce – 1 teaspoon
Soya sauce -1/2 a teaspoon
Salt to taste
Oil for frying
Spring onion greens / coriander to garnish

Make a thin paste with ¼ cup of water

Corn flour – 2 teaspoons
Soya sauce – 1 teaspoon

1. Microwave potato with enough water till 80 % done. You can also cook it on the stove top.Drain thoroughly.
2. Heat oil and deep fry till the edges start to brown. Drain and keep aside.
3. Heat a little oil in a pan and put in spring onion whites, ginger and garlic.
4. Sauté for a minute.
5. Add the thin corn sauce, red chilli powder, soya sauce and mix well.Lower the flame.
6. Check for salt and add if required. Also add a little more water if the corn sauce thickens on cooking. Take care not to make it too watery.
7. Put in the potato fingers and mix well to coat. Simmer for a couple of minutes, stirring in between.
8. Remove from heat and serve garnished with coriander / chopped spring onion greens.



You can make it like gravy adding a little more water or cook it for a few more minutes to get a dry dish. Both the versions are delicious.

Chinese Sesame Tofu

If you have been following my posts for sometime, you must be aware about my love for tofu. It is a bland stuff that fits into anything that it is added to. And that’s the reason I am in love with it.

This dish is a starter that is unbelievably simple and gets done in a matter of minutes. If you are not a fan of tofu, try it with paneer.


I used:

Firm tofu – 1 block
Corn flour – ½ a cup [ or more]
Soya sauce – 1 teaspoon
Salt to taste
Sesame seeds for coating- around ½ a cup[ or more]
Oil for frying.

1.    In a bowl take corn flour, soya sauce and salt. Add water and prepare a batter of coating consistency. [First make a batter of cornflour and soya sauce .Check for salt as some brands of soya sauce may be salted. If needed add later.]
2.    Cube the tofu into fingers.
3.    Heat oil for frying
4.    Dip the tofu pieces in the batter and roll it over the sesame seeds.
5.    Deep fry till golden brown. Drain well.
6.    Serve hot with tomato sauce and spicy vinegar sauce.



I made a batch of sesame tofu fingers following the procedure above and I found the sesame taste to be over powering. So for the next batch, I added a little sesame to the batter and proceeded as above [and skipped coating the tofu with sesame]. I liked this version better of the two. There was still a crunch from the sesame seeds yet not too over whelming

Shanyao Gouqi Zhou | Chinese Yam Goji berry Porridge

Porridge in an integral part of the Chinese breakfast.Most of my friends prefer to have porridge with some sour vegetable pickle[non spicy] and an egg. Porridge is a regular at our house too but only on weekends. I prepare the simpler ones and we love to have it with some lemon pickle and a couple of More Milagai[Sun dried yogurt chillies]. Sometimes I make this porridge with Chinese Yam and Goji berries. A simple meal that is really light on the tummy yet filling.

Shanyao - Chinese yam , Gouqi - Goji berry. Zhou - Porridge.Goji berry has a lot of health benefits. You can read about it in my earlier post on Goji berry.More about Chinese Yam here.Also take a look at the other Chinese Ingredients in the series titled Chinese ingredients Unraveled.

Chinese yam gets a little sticky when cooked and it is a yum ingredient in the porridge. Goji berry imparts a very light sweetness.Usually salt is not added but I add a little to mast the tinge of sweetness.

I used:

Chinese Yam - 50 grams
Goji berry - 10 numers
Rice- 50 grams
Salt to taste

  1. Wash and peel Chinese yam. Cut into small pieces.
  2. Wash rice a couple of times till the water runs clear.
  3. In a pressure cooker vessel, put in rice, Chinese yam, goji berry and lots of water[ I usually don't measure water for porridge and generally add 4 times the water in proportion to rice / porridge mix..So for porridge add around 2 cups more than the rice : water ratio than what you will usually add]
  4. Pressure cook for 15 minutes or till done. The yam should not 'melt' in the porridge. It should still have a light crunch.
  5. When the pressure releases,mix well and if it is thick add more hot water.
  6. Add salt,mix and serve hot.


This porridge is generally for one serving. If you want it as a light meal or a part of a meal it serves two.

Chinese Chilli Garlic Noodles

For this week's theme in blogging marathon I have chosen 'Regional Cuisine' So for the 7 days you will be treated with some simple and easy home made Chinese dishes.

As the first dish in the marathon, I have prepared a spicy version of the ever popular noodles with a yummy  garlicky flavor. If you love spicy food and garlic you can never say 'No' to this one.

I used chilli sauce for this recipe and a small quantity was sufficient to bring the fiery taste. Yet it did not turn the dish 'Red' in color which is usually the indicator of spiciness.


I used:

Noodles - 1 packet
Garlic - 5 pods, minced
Mixed vegetables,chopped - 1 cup [ I used carrot, purple cabbage, capsicum]
Spring onions - a small bunch
Red chilli sauce - 3/4 teaspoon [ The brand I used is very fiery. Adjust accordingly]
Soya sauce - 1 teaspoon
Sesame seeds, black - 1 teaspoon
Oil - 2 teaspoons
Salt to taste

  1. Boil the noodles according to the instruction on the pack. Rinse under cold water and keep aside.
  2. Cook carrot till soft. This can be done on a stove top / microwave.
  3. Chop the spring onion and separate the green and white portions.
  4. Heat oil in a wok and put in garlic and chopped spring onion whites.
  5. Saute on high till it is fragrant and just starts to brown.
  6. Put in capsicum , purple cabbage and saute on high for a minute.They should remain crunchy.[ The same can be done with carrot also.]
  7. Add the carrot , soya sauce, chilli sauce and mix well.
  8. Check for salt. If using salted soya sauce, you can skip salt, else add in this step.
  9. After a few seconds put in the noodles and using a chopstick mix well so that the flavors blend well. [Chopsticks are very comfortable to mix noodles when compared to using a spatula.]
  10. Cover for a minute on low flame and remove from flame.
  11. Serve garnished with sesame seeds and spring onion greens


Note:

  • Instead of Chilli sauce, you can also use Chilli oil. I will post the recipe soon.
  • Add any other vegetable that you like.
  • This can also be prepared without any vegetable also. Just spring onion whites and greens in the dish will give it another flavor.

Dragon fruit Sorbet

By now you must be quite familiar about my love for Dragon fruit. In my quest for a variety of dishes with this exotic and pretty  fruit, I saw this recipe at Sugar Laws blog.

This one too is very simple and easy to make but remember freeze the empty shell of the dragon fruit as it becomes a very pretty serving dish.



I used

Dragon fruit – ½ a large fruit
Lemon juice to taste
Sugar to taste
Water

1.    Pulp the dragon fruit along with sugar and lemon juice. Add water to adjust consistency. I used around ¼ cup water.
2.    Pour it into a freezer proof container and freeze tills set. Also freeze the empty shell.
3.    When set scrape with a fork and serve on frozen dragon fruit shell.



If you are not serving this immediately, freeze the sorbet in the shells till ready to savor.

Guiltfree Banana Ice cream

Today's post has many amazing 'features'. It is guilt free, has no added sugar yet sweet, cool and refreshing, almost instant, very delicious and best of all does not need an ice cream maker!

When I hosted a No cook event some time back, Madhuri of Cook Curry Nook sent me this Ice cream . I was so amazed to see how easy and yummy it was.

Ever since I wanted to make this but as soon as bananas are seen in the fruit basket, it disappears before I remember to put some in the freezer. A couple of days ago I managed to chop up some bananas and put it to freeze as soon as I came home with a dozen bananas.

Then I made this just a few hours ago and surprised Lil Angel with a bowl of this delicious ice cream.



I used:

Bananas -1 large, peeled and thinly sliced
Milk- 1 tablespoon
Raisins- a few

1. Freeze the banana slices.
2. When frozen remove from freezer and grind it along with the raisins and a little milk.
3. Immediately scoop out into bowls and serve with a topping / garnish of your choice.



Isn’t it easy and guilt free too!!!By the way, I said this is an almost instant icecream as long as you have frozen bananas ready in your freezer to remember to put them there.This ice cream is very sweet. In fact I have not added sugar , yet it was so sweet!

The picture does not do justice to the taste. The ice cream was melting away before I could click. But be sure to try it to believe the yumminess of this guilt free dessert....

Oats Banana Dragon fruit Milkshake

After I made the Dragon fruit banana smoothie, I wanted to try a milkshake and made this as a breakfast substitute. With the summer heat becoming unbearable, we had this one morning before taking off on a trip to the vegetable market. Lil Angel found it filling and did not ask for anything to eat till we came back home some one and a half hours later. Yes, we spent that much time walking around the new farmers market near our home . Most of the time was taken up by out quest to locate a rare or new[ to us] vegetable or fruit.

So back to the recipe, as I said, it is filling and a delicious one. I am not giving the quantity of the ingredients as you can add it to suit your taste. Well, the actual fact is that I forgot to measure and just added the ingredients one by one as and when I saw them.



I used:

Dragon fruit cubes
Banana slices
Chilled milk
Raisins
Quick cooking Oats[ slightly roasted]

Blend all the ingredients till smooth and serve immediately.


Note:

I did not add sugar as the bananas were way too sweet.

Oreo Cookies Milkshake

Oreo cookies is something that I love to indulge in.This contagious craving was caught from my Lil Angel who loves it more than any other biscuit / cookies.Often there is a small 'fight' for the last Oreo cookie and invariably she wins.

So when we went to pizza hut last night both of us jumped up to order Oreo cookies milkshake. The picture on the menu card looked so appetizing that it made us want to grab it off the page.The  Dark brown colored drink gave me an impression of a chocolate milkshake and we were eager to taste it.But something in me stopped me from ordering 2 of them so only one for Lil Angel arrived first along with the starters.

Just the look of it put off our desire and Lil Angel did not even want to taste it. The reason - It looked nothing like what was depicted in the menu card. Dull grey in color with some chopped nuts [ which was not seen on the click] and very slushy with loads of scrapped ice. The taste too was not very encouraging. I felt RMB 20 go down the drain, well literally. I was not able to drink even half the quantity. We were totally disappointed . All the way home Lil Angel kept telling me that she did not like that milkshake and asked me to make it at home for her. I agreed but was wondering how to bring out that effect.

Today morning, we [Lil Angel and me] set out to prepare this milkshake and she was truly impressed by the color and the taste. One innocent question of hers made me understand how well my folk,Lil angel included,understood me. Wondering what she asked! Well, as I was blending the milkshake she came up to me and asked ' Do I get to drink all of this as soon as you take a picture for your blog'. I was amazed and touched to see how well she understood my passion.

This tasty Oreo cookie milkshake is exclusively for my Lil Angel .It was served immediately after the photo session and she enjoyed every sip.


 I used:

Oreo cookies - 4
Drinking chocolate powder- 1 tablespoon
Chilled milk - 200ml

  1. Break off a small piece of the cookie and crush it. Keep it aside. It will be used as the garnish
  2. Powder the remaining Oreo cookies.
  3. Add drinking chocolate powder and milk and blend till frothy
  4. Serve immediately garnished with crushed Oreo bits

 Note :

  • I did not add sugar.
  • You can adjust the quantity of drinking chocolate to suit your taste
  • Tastes best when served chilled
  • Don't worry if you see a thick layer on top even if the milkshake rests for a couple of minutes. It the ground cookie bits that are surfacing. There is no change in taste though.
  • You can also add a few crushed ice cubes to the milkshake

Dragon Fruit & Banana Smoothie

I have always fancied the Dragon fruit. You can read here about my first introduction to this beautiful fruit.I have fallen in love since then.

I got a couple of these pink fruits a few days ago in the plans of creating as many dragon fruits recipes as possible.So in the next few weeks you can expect some easy yet awesome recipes with Dragon fruit.


There is a way of preparing this fruit for eating as such or for further processing.

Cut this fruit lengthwise


Run a spoon around the edges [between the flesh and the peel]


Gently tap out the flesh



If a small amount of pulp is stuck to the flesh scrape it off with a spoon


Dice the flesh.

The 'shell' can be used as a fancy cup to serve salad, sorbet, jelly etc. Freeze the shell until you are ready to use it.

Now coming to today's recipe, it's a very simple smoothie that is totally refreshing when served chilled.The crunchiness from the seeds is bound to impress kid's and adults alike.



I used:

Dragon fruit, cubed - 1/2 a large fruit
Banana,chopped - 1,small
Blueberry flavored yogurt [chilled] - 200ml

Blend the dragon fruit cubes,banana with yogurt and serve immediately.


Note:

  • You can use Greek yogurt instead of flavored yogurt or if you like you can also use any other flavored yogurt.
  • I did not add sugar as the smoothie was sweet on its own. You can add honey / sugar if you want some extra sweetness
  • Add a little chilled water while blending if the smoothie is too thick.
The smoothie was mildly flavored and my Lil Angel 'ate' it from a spoon!The next time, I will add a little water as it was very thick.

Sugarcane Juice Sorbet

Sugarcane juice is not amongst the favorite list of Lil Angel. She finds it too sweet. Her tolerable level is just a couple of sips and not more. We on the other hand love this so much that we don't mind gulping down a couple of cups at a time.

I wanted her to relish this.Sugarcane juice has a number of health benefits apart from the fact that is very delicious.

  •  It is an instant source of energy.
  •  It has anti oxidant properties
  • It promotes the clear flow of urine and helpful in avoiding kidney stones.
  • Sugarcane juice is given in the treatment of jaundice
Apart from this it is really refreshing to have a cup of sugarcane juice when the summer heat is killing us.

I wanted Lil one to enjoy this delicious sugarcane juice in a different form so I made this sorbet. In India, when the sugarcane juice is expressed, lime / lemon is kept between the sugarcane. The combo of lime and sugarcane is really refreshing. Here in China, sugarcane juice is expressed as such without any addition. I got this sugarcane juice [freshly expressed] and came home and added ginger powder and lemon juice to taste. Then made it into sorbet. Lil Angel loved this!


I used :

Sugarcane juice - 300ml
Ginger powder- 1/2 a teaspoon
Lemon juice- 1 teaspoon

  1. Mix all the ingredients together.
  2. Put it into a freezer proof container and freeze till set. 
  3. Around 10-15 minutes before serving, remove from freezer, scrape with a fork and serve in individual cups.


Note :

You can adjust the quantity of ginger powder and lemon juice to suit your taste.

Apple Frapple

Here starts another edition of Srivalli's blogging marathon and the theme I have chosen is summer coolers. I found this very convenient as I am also hosting Srivalli's Kid's Delight event with the theme Cool Comforts.

Today's summer cooler is my Lil Angels Favorite.I usually prepare apple milkshake that she loves and when I saw this recipe on Nithya's 4th Sense cooking blog, I tried it right away and needless to say this became her new favorite.

Apple blended with milk and ice cream and a light sprinkle of cinnamon powder does the trick.




I used:

Apple - 1,large, peeled, cored and cubed
Milk - 150ml
Vanilla ice cream- 1 scoop
Sugar to taste
Cinnamon powder - a pinch

Blend all the ingredients except Cinnamon powder and serve chilled with a pinch of Cinnamon powder sprinkled on top..


A very delicious cooler that even adults would love to sip..

Announcing Kid's Delight Event

This month I am happy to host Srivalli’s Kids delight event in my blog. The theme I have chosen is ‘Cool Comforts’. Summer is here and all of us are eager to chill out with juices/ shakes/ ice creams. Children too prefer something soothing for this climate. Instead of giving them store brought colas / icecreams / shakes why not we prepare them at home and let the kids enjoy the yumminess of home made coolers.



So for the next 30 days let us prepare dishes that are preferred for this climate. You can send in

•    Sorbets
•    Granitas
•    Ice creams
•    Smoothies
•    Chilled soups / salads,or anything that you feel is fit to beat the summer heat.

Please remember that we are preparing all this for the little ones at home. So make them healthy and tasty.

1.    Cook and blog about any Vegetarian / vegan food that fits the theme – Cool Comforts.
2.    Multiple entries are allowed.A small request here. Kindly send me all your entries together so that it is easier when I am doing the running roundup.
3.    Posts from archives are allowed as long as they are updated as a current post. The maximum number of entries from archives is 5.
4.    Recipes sent to this event can be shared with other events as well.
5.    Link to this post and to Srivalli's Kid’s delight post (http://spicingyourlife.blogspot.com/2010/01/announcing-kids-delight-wholesome.html) is mandatory.
6.    Non bloggers are also welcome to send in their entries.
7.    The dead line is June 15th 2011.

Resposting for H & F event

I wanted to prepare some dishes featuring fenugreek but somehow it did not materialize.Hence re-posting a few of my posts with kasuri methi / fengreek for Herbs and flowers in my platter event, guest hosted by Kalyani @ What's cooking??

A favorite one pot meal - Methi vegetable Pulao with methi leaves and vegetables make a filling and nutritious meal.

My post as the Editors Choice!!!

A couple of months ago , I saw someone mention about Blog Junta which is a forum to meet and interact with other bloggers. I hopped over and saw a number of activities going on and I signed up immediately.A few days ago, I got a mail telling me that my post Kala Channa - spinach gravy was selected as the Editors Choice!! This Kala channa post has been on the popular post list on my blog for the past several weeks.If you remember, I made this for the previous blogging marathon when I wrote about Diabetes. On the last day of the marathon I wanted to write about diabetic diet and somehow could not find time to sit and write. So I posted this recipe that was in my drafts which I felt would be fit to be a part of a diabetic meal.

My last minute choice is now a winner!I am immensely happy to see this post @ the editors Choice :). Thanks to the editor for picking this...
