Sprouts,Veggies & Bhel Salad

This is a salad that is a burst of flavors and textures.Very simple to put together and yet very filling.This a nice way to make children eat salads.

I have used a mixture of red capsicum,green capsicum,peas,onions that are lightly sauteed and fresh moong sprouts are added later to the puffed rice...


I used:

Puffed rice- 1 cup
Capsicum[red and green] - 1/2 each,chopped
Onion- 1,small,chopped
Frozen peas- a handful
Moong sprouts- A handful
Sambar powder- 1 teaspoon
Salt a pinch[if needed]

  1. In a pan put in puffed rice and sambar powder.Roast on low heat till the puffed rice id heated through,maybe 8-10 minutes.If you make a large batch,let it cook completely and store in an air tight container.Use as and when required.
  2. Similarly, saute onion,capsicum,peas in a pan for a couple of minutes.I did not add oil.Just sauteed it on low flame for sometime.The vegetables were still crunchy.This step is optional.
  3. In a bowl take the puffed rice.Fold in the vegetables,and salt if using
  4. Transfer to a serving dish and generously sprinkle moon sprouts and serve garnished with coriander / mint leaves.

This is a very filling snack / salad

Rose Flavored China Grass / Agar-Agar Pudding and a Giveaway from CSN

I can still remember the day when I stepped into the new school and discovered the back compound with all the swings,monkey ladders,slides and merry-go-rounds.It looked like a fairy land to me.I would often skip lunch to play in one of those things.I had always wished that I had something like that at home too.It was not possible then.

So,coming to today's post.....I just found out that this is my 700th post!!I am really happy and proud of what is going on around here.It's only apt that I share my happiness with a dessert and of course, with the giveaway.


Now coming to the dessert for today's celebration.Here is a simple one that I prepared with China Grass also known as Agar-Agar.Agar-agar / China grass is a gelatinous material derived from Algae.It is a vegetarian gelatin substitute.I will write more about Agar Agar in tomorrow's post.

I wanted to give this dessert a beautiful pink or green color.Instead of food color,I used rose milk powder to add color and flavor to it.

 
I used:

Agar sheet - 10 gram
Milk - 1 litre
Sugar- to taste
Rose milk powder - to taste[I used 3 teaspoons]Adding too much can make it a little bitter.So taste and add.
Roasted nuts to garnish

  1. Bring milk to boil in a vessel and simmer.
  2. Take half a cup of this milk and dissolve the china grass.Stir well till it dissolves completely.
  3. Add this to the simmering milk and mix.
  4. Put in sugar and the rose milk powder.Mix well.
  5. Remove from heat and our into molds or a tray.[Don't heat it for too long]
  6. Cool till it is set.Refrigerate if you are in a hurry.
  7. Cut the dessert into diamonds/ desired shapes if you have poured it into a tray or serve garnished with nuts if you have poured it into molds/cups.
Enjoy the chilled rose milk flavored dessert :)

Corn Pulao

I once got a bag of these beautiful corns.My folks are not into enjoying corn to a greater degree so before I froze the batch,I made this corn pulao.I served it with brinjal raita.The pulao was welcomed by the young and elderly alike and I can happily say it was a hit!




I used:

Rice- 2 cups,cooked,grains separate
Fresh corn-1/2 a cup
Carrot- 1,small,grated
Onion- 1,sliced
Turmeric powder- a pinch
Whole spices - Cardamom- 2, Cloves- 2, Cinnamon-1" piece,Bay leaf - 1
Ginger garlic paste- 1 teaspoon
Cumin seeds-1 teaspoon
Salt to taste
Oil- 1 teaspoon

  1. Microwave corn with enough water.I microwaved it for 5 minutes till it was almost tender.Drain and keep aside.The same can be done on the stove top too.
  2. Heat oil in a pan and put in cumin seeds and whole spice.
  3. When the cumin crackles, add the ginger garlic paste,turmeric powder and saute for a minute.
  4. Add onion and carrot and cook till onion turns translucent.
  5. Put in the corn,rice,salt and mix well.
  6. Reduce the heat and cover and cook for 5 minutes for the flavors to blend.If the rice mixture is dry,sprinkle a little water.Take care not to add too much water as the rice will turn mushy.
  7. Remove from heat and serve with raita / pappad

Instant Ragi Dosa

Sometimes it so happens that we are not in a mood to go in for dosas that need to be fermented.Its either because of the climate where the batter refuses to rise or because we simply forget to soak the pulses and rice to grind later or because we don't have the patience to wait till the batter ferments to rise as we need a quick fix dosa for dinner or breakfast.

When one or more of these reasons rule,Instant Ragi Dosa is something we can go in for.Its instant,tasty and healthy.What more can we ask for!




I use:

Ragi flour - 2 cups
Rice flour -1 cup
Urad dhal flour - 1/2 a cup [ see note below]
Salt to taste

Optional - Yogurt / Curd 11/2 -2 cups

Optional additions

Onion - finely chopped
Coriander leaves- finely chopped
Curry leaves- roughly torn
Green chillies-chopped
Drumstick leaves

  1. In a vessel put in the flours and salt.
  2. Add water to make a batter free of lumps and of dosa batter consistency.[See note below]
  3. You can add one or more of the optional ingredients to the batter 
  4. Heat a griddle and pour a ladle full of batter and spread lightly.You may not get a perfect circle if you have added the optional ingredients.But never mind,it tastes just as good :).Drizzle oil if you like.
  5. Cover and cook till the edge leaves the griddle.
  6. Flip it over and cook for a few minutes.
Serve hot with a chutney of your choice.

If you have a couple of hours to spare,here is what you can do....

In a vessel take both the flours and mix in salt.Add curd and mix well.Take care to see that there are no lumps.The mixture will be pasty.Set aside for 2-3 hours.Before you prepare dosas,add the required quantity of water .Here too you can add one or more of the optional ingredients Mix well and prepare dosas as above.



There is another method using leftover Idli / dosa batter.All you need to do is add some ragi flour to the leftover batter and if you want to enhance the taste,add the optional ingredients listed above and prepare the dosas.

Note :

  • To make the urad dhal powder, dry roast urad dhal in a pan till it turns light brown.Cool and powder finely.Store in a jar and use as and when required.
  • You can mix all the flours and store in an air tight container.When u need to make these dosas,just add water and salt to the mixture.
  • Since there are too many flours involved,I usually dump the flour and add water/curd in the largest jar of the blender and run it in short bursts for a couple of minutes.This ensure that there are no lumps.
  • If the dosa does not come out well,pour a teaspoon of oil on the griddle.Half an onion.Rub the griddle with the cut surface of the onion for a minute and then proceed.

Ragi Porridge - Ideal weaning food.
Ragi Aadi with herbs- Enhance the taste and the nutritive value of the usual Adai.

Aloo Nu Raita | Batata Nu Raita | Potato Raita | Potato Yogurt Salad

A simple Gujarati Raita to go with flavored rice dishes.I made this one to go with the Microwave Spicy Pulao.This raita is also made in the microwave.You can also try it on the stove top.

I used

Potato -1 small,peeled and chopped into small cubes
Yogurt,thick n fresh -2 cups
Cumin powder- 1 teaspoon
Red chilli powder-1/2 a teaspoon
Salt to taste
Oil- 1 teaspoon
Coriander leaves to garnish

  1. In a microwave safe bowl,put in potato and enough water and microwave covered for 5 minutes or till the potato is 90% done.
  2. Drain remaining water and keep aside.
  3. In a microwave safe bowl put in oil and potato and mix.
  4. Microwave on high for 4 minutes,stirring at the end of the second minute.Let it cool.
  5. Whisk yogurt with salt,chilli powder and cumin powder.
  6. Add the potato to the yogurt.
Serve with a rice dish garnished with mint / coriander leaves.

Curried Pumpkin Soup

It is time to bring out my favorite soup bowl.Yes,its winter and we need something warm and soothing and I made this creamy soup from Louanne's Kitchen with whom I am paired for this edition of Taste and Create.If you want to join the fun,here is how it works

So,a very filing and delicious pumpkin soup that I had with a pav bun,is what I am going to share with you today from Louanne's Kitchen.



Curried Pumpkin Soup
Source -Louanne's Kitchen

I used:

Pumpkin cubes- 1 cup
Vegetable stock - 1 cup
Coconut milk- 100ml
Onion- 2,chopped
Green chillies / jalapeno - 4,chopped
Garlic cloves-2,minced
Curry powder- 2 teaspoons
Unsalted butter- 2 teaspoons
Salt to taste
Mint leaves to garnish

  1. Heat butter in a pressure cooker.
  2. Once the butter melts,add onion,garlic and green chilies and saute till onion is brown.
  3. Add vegetable stock and bring to boil.
  4. Put in pumpkin cubes and pressure cook for 10 minutes or until pumpkin is soft.
  5. Cool and puree.
  6. Return the puree to a heated pan and add coconut milk,curry powder and mix well.
  7. Simmer for 5 minutes.
  8. Add salt [ and pepper if required] and serve garnished with mint leaves.

Fusion Food -Vegetarian Special - Book Review

Do you remember long time ago I had made a tasty Baby Potatoes with fenugreek ?Its from this very book that I tried it.I found it in a used books shop and got it for a very low price.This book looks as good as new and had some vitamin supplement ad on it.Someone who had owned this copy was not interested in cooking perhaps!!So I got this super book.

The author is Komal Taneja who studied botany and got a diploma to be a pharmacist ,turned around to follow her passion-experimenting with unconventional combination of ingredients to create fusion food!

True to its name,this book has everything in 'fusion'.The books starts with an Introduction and Kitchen basics follow which is a compilation of basic recipes.Then comes the real treat.

Kollu Idli | Horsegram Idli

Horse gram / Kollu is one of my favorite lentils and I used it make idlis.Though I made this eons ago,its being posted just today.The idlis were fluffy and since they looked different from the regular idlis,it was a hit.

All you need is some freshly ground idli batter and horsegram.[If the batter is very sour,the idli's don't taste good.].A little preparation work and you are rewarded with a healthy idli.




I used:

Idli Batter - 5 cups,fresh.
Horse gram / Kollu - 3/4th cup

  1. Roast the horsegram in a pan and pressure cook  with enough water till soft and mushy.Horse gram take a little longer to cook.You can also soak it for 8 hours and then pressure cook it.
  2. Drain the water[and add it to soups,gravies,rasam, etc] and grind the horsegram to a paste.Add a little water if needed but it should not get watery.
  3. Add this paste to the idli batter and mix well.
  4. Check for salt and add if needed,adjust the consistency by adding water.
  5. Grease idli moulds pour ladle full of batter into each mould and steam for 15 minutes or till its done.
Serve hot with a chutney of your choice.

2010 in Review @ Wordpress!!!

Initially I started blogging in Wordpress under the same title.Then one day I 'found' blogger and started using it.I maintained the wordpress blog like a back up so that in case I lost anything on blogger I could pick it up from Wordpress.

I used to import blogger posts in wordpress whenever I remembered to make a backup,sometimes it would be the same day,sometimes after a couple of months.So many times when I imported the post,some failed to appear in wordpress.Yet I continue this backup process till date...

Then this year[In the first week of Jan] I got a mail from Wordpress team about how my Wordpress blog fared in 2010 and I was truly impressed at their work!

Dragon Fruit Salad -Taste the Exotic!

Sometimes when certain things are there forever with you ,you take it for granted and really don't realize how worth it is.It can be in a relationship or things or even food stuffs.Dragon fruit is one such fruit that I have taken for granted and failed to mention about it in my blog until I saw a post by Aparna of  My Diverse Kitchen.

It is such a commonly available fruit in the orient that I simply 'ignored' it.I have been making salads and sorbets with this exotic fruit but never once blogged about it!So here it is today...

The recipe comes with a story.When I came to the orient,I saw this strange looking pink fruit.It looked very attractive and a little mysterious.I did not venture anywhere near it.I didn't even know its name!Then one day my landlady came home to visit me and handed me a bag of fruits and in this I found the mysterious pink one too.

She asked me if I liked it and I frankly answered her that I have never tasted it before.She looked shocked and immediately set about cutting the fruit [I have shown in this post how it is done].Looking at the beautiful color,I imagined the fruit to be very tasty and the flesh to be pink.But when I saw it ,I was amazed.It looked so nice with numerous black needs on the white flesh.It was not at all sweet and I liked the little crunchiness of the seeds.

Today I will post the salad recipe that is a breeze to prepare...


Before I go on to the recipe ,here is some interesting facts about this fruit....

  • This fruit comes from a cactus like plant 
  • It is called huĒ’ lóng guĒ’ in China and the other names included - Pitaya/ pitahaya / lóng zhÅ« guĒ’/ strawberry pear or nanettikafruit.
  • There are three varieties of this fruit -  
                 Hylocereus it has red skin and white flesh,the one that is commonly referred to as the dragon fruit.
                Hylocereus polyrhizus it has red skin and red flesh.
                 Selinecereus megalanthus it has yellow skin and white flesh.
  • It is rich in Vitamin C
  • It is said to lower blood glucose level.
  • Improves appetite and digestion
  • Helps strengthen bones,teeth,good vision.
  • Improves memory!!!
This fruit is relatively cheap in places where it is grown for I got 1 fruit which weighed around 500g for RMB 7 but elsewhere I have heard that its pretty expensive.
    Here is what it looks like.....



    This is how you prepare the fruit for the salad / smoothie / sorbet....



    Using a sharp knife cut the fruit length wise.

    Insert a spoon between the skin and the flesh of the fruit and run it along the cut half.


    Remove the flesh and keep aside.Scoop out the remaining flesh if its sticking to the skin


    Check if the skin is sticking onto the flesh and remove it.Cube the flesh and use as desired



    For the salad you need:

    Cubed dragon fruit
    Lemon juice
    A pinch of salt/ sugar[optional]
    Mint leaves,chopped for garnish.[I have used coriander since mint leaves were not available.]

    Empty 'shells' of scopped out dragon fruits- refrigerate till ready to use- To serve the salad

    In a bowl put in the cubed dragon ,drizzle lemon juice and add sat/sugar as per  your choice.Toss gently and serve garnished in the reserved dragon fruit 'shell'.

    Bhee Masala

    This one was in the week #1 menu. I started a weekly menu plan but now have stopped making one coz my cook does the lunch preparation and I am left in charge of the dinner and breakfast.Will again start menu plans for that but until then I am going to prepare stuffs that I can make easily.

    Anyway,I have already posted a Sindhi Bhee curry in my blog earlier..Here is another variation. This delicious gravy goes well with steamed rice as well as with chapathi / roti.


    I used:

    Lotus stem/ root – 1
    Peas- 1 cup
    Potato- 1,small
    Tomato- 2 large
    Onion- 1 ,sliced
    Mustard seeds- 1 teaspoon
    Cumin seeds- 1 teaspoon
    Coriander powder- 1 teaspoon
    Cumin powder- 1 teaspoon
    Garam masala- 1 teaspoon
    Salt to taste
    Oil -1 tablespoon
    Coriander leaves to garnish

    1. Clean, peel and chop lotus roots.
    2. Puree the tomato and keep aside.
    3. Heat oil in a pressure cooker and put in mustard and cumin seeds
    4. When it crackles add the onion and sautƩ till the onion is translucent.
    5. Add the tomato puree and cook for a minute.
    6. Add 2 cups of water and simmer.
    7. When it boils add the peas, lotus root, potato. Add the coriander powder,cumin powder and salt.
    8. Pressure cook for 10 minutes or till the lotus root is cooked. If it is tender,it will get cooked faster.
    9. When the pressure releases, open the lid and add garam masala.Mix well and simmer for 2 minutes and serve garnished with coriander leaves.

    Goes well with chapathi/ steamed rice
