This months challenge for Blog bites 7,Nupur choose to call it Iron chef Edition,inspired by the popular culinary game show-Iron Chef America.We choose any ingredient and cook it in two ways.I chose bread.
I got 2 yummy recipes from two blogs.One from Prathiba's The Chef And Her Kitchen and the other from EC's Simple Indian Food.
A loaf of bread is omnipresent in our house,so thought I will use this to try different recipes.
The first one is the Vegetable toast which is from Prathibas blog inspired by a local bakery called ' Bangalore Iyengar Bakery'.And hence the name Bakery toast.It was yum and the toast looked so vibrant.Here is the original recipe.
Have a look at the toast before I proceed with the procedure...
White bread slices
Ripe toamto-finely chopped
Chilli powder-to taste
Chat masala-a dash
Salt to taste
Butter to toast the bread
- Heat oil in a pan and put in cumin seeds.
- When it crackles add the onion,capsicum and saute till onion is translucent.
- Put in tomato and cook till mushy.
- Add the grated carrot,chilli powder,chat masala and salt.Mix well and cook for a minute.
- Finally add tomato ketchup,mix well and remove from heat.
- Toast bread with butter.
- Take some of the filling and heap over the toasted bread and level it with a spoon.
- Serve as such or with tomato sauce.
Please note that I have not given the quantity for the ingredients used in the topping.It is totally upto you.You can add more or less of any of these ingredients and yet the toast is going to taste just as good.

Make a thick batter with the following
Thick curd -1/2 a cup
Roasted Rawa /Semolina -1/4 cup
Ginger paste-1/2 a teaspoon
Green chilli paste-1/2 a teaspoon
Cumin seeds-1 teaspoon
Finely chopped onion
Dip the bread slices in the batter[both side should be well coated with the batter] and cook it on a griddle.Drizzle a little oil and cook till it is crispy on both the side.Garnish with coriander leaves and serve hot immediately with sauce.
