Easy Celery Soup

Yesterday morning I woke up late,as usual, in spite of having to pack lunch for hubby.Sleepily I gazed out of the window and what did I see!!!!The whole world in front of me was covered in a thick blanket of snow.

Sleepiness flew and lunch forgotten I ran from window to window looking out at the snow which was falling quite heavily.

Picking up my cam I clicked to my hearts content.It was 7am and I realized I had not prepared lunch so I ran to the kitchen to get it ready but my excitement didn't die down.I could not help but stare at the beautiful snow fall.

Why all this excitement?!!!This is the first time I am witnessing such heavy snowfall!For those of you who know me well, I am a person who loves winter and all through my life I have been waiting for this one moment.I even pinched myself to check if I was dreaming!!Afterall,what is winter without snow!

I gathered some snow from the window sill and made my first ever 'snow man'.He is really very tiny yet I loved him!!I put him outside in the balcony so that lil angel could see him when she wakes up...

After hubby left for work,I was desperate to go out.I picked up the shopping bag and in the pretext of buying vegetables I ran out.My neighbor and her son were very busy throwing snowballs at each other.Her little son had made a cute little snowman and here it is...

The road to the farmers market was so slushy that I had to watch each step.I was sliding on and off and was soo thrilled!

The only disappointment was that the farmers market was closed but I was not worried.I had all the time to take a walk around our apartment complex and click some pic.

Last but not the least,I made a footprint on snow and stomped around the side walk like a child.Well,there was no one around and I was excited...

The snowfall continued till 1 in the noon and all the while I sat by the window watching the thick flakes glide down.A very memorable day in my life....

This is how my kitchen window looked today morning!!Very pretty rite!!The water had condensed and formed a beautiful pattern on the window...

The snow has not melted today and it still covers most of the places and still very cold and chilling days like these call for warming soups!!!

Here is Celery Soup that was inspired from my dear friend -Dhivya's blog -Chef in you .I have made a few changes from the original recipes.Here is my version.


I used:

Celery- 5 stalks, chopped
Potato-1, peeled and cubed
Onion-1, chopped
Garam masala- 1 teaspoon
Vegetable stock-4 cups
Coriander leaves- 1 tablespoon, chopped
White sesame seeds-1 teaspoon
Salt and pepper to taste
Oil- 1 teaspoon
Black sesame seeds – to garnish

1. Heat oil in a pressure cooker and put in onion, white sesame seeds, garam masala and sauté till onion is transparent.
2. Put in potato and celery and sauté for a minute. Add stock and pressure cook for 10 minutes.
3. Cool and puree.
4. Transfer the puree onto a pan and bring to a boil. Adjust consistency by adding more stock / water.
5. Put in coriander and simmer for 5 minutes.Add salt and pepper.

Serve hot garnished with black sesame seeds.
