I can never forget the soup Ju's mom had prepared for us when we visited them for the first time.It was around the spring festival time this year that they had invited us and it was freezing outside.
Her mom had prepared a soup of mushroom and spinach with a lot of ginger and that soup worked magic!!! It was like an instant 'heat-up'!I remember savoring 3 bowls of that warming soup.At that time I had forgot all about the blog and was concentrating more on enjoying the bowlful of soup.Hence no picture and recipe.
This time though I was sensible enough to click a quick pic and also get the recipe from her coz she prepared all the dishes for me in a matter of minutes!
For a quick and delicious Mogu jiucai tang you need:
Mushrooms- 100 grams[She used enoki mushrooms]
Chinese leeks-a small bunch,roughly chopped
Ginger-2" inch piece
Oil-1 teaspoon
Salt to taste
- Heat oil in wok and put in chopped ginger.Saute for few seconds.
- Put in the mushroom and stir for a couple of minutes .
- Add salt,required quantity of water and the Chinese leeks.
- Cook till the leaves are soft.
- Remove from heat and serve hot.
A hearty soup ready in a couple of minutes.
