Yet another family favorite.As I had mentioned in my post on Bitter gourd stir fry ,we love this vegetable so much that I always have a couple of these in stock.Whenever hubby wants two vegetable curries with lunch,this is the easiest to prepare.
Even though it is a deep fried curry,we just cant stop eating them!!!
You need:
Bittergourd -1
Salt to taste
Red chilli powder to taste
Oil for deep frying
- Heat oil in a pan.
- Meanwhile wash,pat dry and slice the bittergourd into thin circles.It there are seeds remove them .
- When the oil is hot,fry them in batches till brown.
- Remove from oil with a slotted spoon onto a bowl lined with a paper towel.
- When the whole lot has been fried,transfer them to bowl and sprinkle salt and red chilli powder.
- Toss and serve.
Sometimes we finish this off first,even before we start the meal coz they are so irresistibly!!!
